Grilled Swordfish Skewers

Ingredients
  • 1 lb fresh swordfish fillets, cut into cubes
  • 1/4 cup Monini Coratina Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water for 30 minute
Preparation
  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together Monini Coratina Extra Virgin Olive Oil, minced garlic, lemon juice, dried oregano, paprika, salt, and black pepper.
  3. Thread the swordfish cubes onto the soaked wooden skewers.
  4. Brush the skewers generously with the olive oil mixture, coating them evenly.
  5. Place the skewers on the preheated grill and cook for 4-5 minutes per side, or until the swordfish is cooked through and has a nice grill marks.
  6. Once done, remove the skewers from the grill and let them rest for a couple of minutes.
