Olive Oil Muffins

Ingredients
  • 1 cup sugar
  • 1 cup olive oil
  • 3 eggs
  • 1 cup white flour
  • 1 sachet yeast
  • Peel of 1 lemon
Preparation

Vigorously whisk the eggs with the sugar and olive oil.

Sift the flour with the yeast and mix it gently, a little at a time. Flavor with a sprinkling of lemon peel and mix one last time, again gently.

Fill the silicone muffin cups only up to three quarters of their capacity to allow the dough to grow during the leavening process.

Put in preheated oven at 350°F for about 15/20 minutes, checking cooking with a toothpick before taking them out of the oven.
