Guacamole Dip

Ingredients
Serves 8
  • ¼ cup Classico Monini Extra Virgin Olive Oil + extra to drizzle
  • 2 medium ripe avocados, smashed
  • 1/3 cup coriander leaves, chopped
  • 1 large garlic clove, crushed
  • 1 lime, fine zest & juice reserved
  • ¼ tsp chili flakes
  • Corn chips
  • Salt & pepper
Preparation

Method (serves 8)

  1. Combine extra virgin olive oil, avocado, coriander, garlic, lime zest and lime juice in a medium bowl and season with salt & pepper.
  2. To serve drizzle with Monini Extra Virgin Olive Oil, add chili flakes and corn chips.
